Stefano Daffonchio farms 25 acres in eastern Piemonte’s Colli Tortonesi. The area is home to the rare Timorasso, a variety so challenging to grow that it has but a handful of producers. Hard work pays off however in lovely, ageworthy wines that burst with fresh acidity and one-of-a-kind aromatic character. A must for fans of Italy’s hidden regional treasures.
